I don't care what your uncle says.Big flare -ups and lots of flame when you're grilling is not a good idea.You just end up with steaks that are covered in carbon and soot and they do not taste nice.This is how you fix it.Before you even take a steak out the packet you have to set your grill up properly.What you want is your charcoal or your fire on one side and the other side you don't want anything.

So, to start, we're going to put the steak on the hot side.What we're trying to do is build that crust.We're trying to sear the steak in nicely.Just like you would in a pan, you're going to flip your steak every 30 to 45 seconds until you reach your desired temperature and the crust is nicely built.Now, where it all comes unstuck is when all this lovely fat, which we want, starts to render.It drips on the charcoal or the wood below.

and it flames up, which is exactly why we have our safe zone.As soon as your steak starts rendering a lot of fat and you start seeing flames, move it to your safe zone and continue cooking it there, bringing it back and forth intermittently until you have the right temperature of your steak and you've got a great crust formed.
