Today we eat 500 pomelo pieces. First, absorb the juice. Puncture it with 1,000 tiny dots. Then, slice along the central axis to gently peel off the soft outer layer. Next, separate each piece one by one.

It takes two hours to prepare 5,000 pieces. Select only pieces at least 18 millimeters long. Use an extractor to puncture one side and extract the juice. This took me 18,000 seconds of my life. Store the juice in test tubes. Inject the extracted juice

back into each segment and add one piece of sugar. Let the sugar dissolve inside each piece. Repeat the process. Finally, mix 52 pieces of sugar into the pomelo juice. Heat and concentrate it. Cut out the optimal tasting parts of the pomelo skin. Brush concentrated pomelo juice onto the skin and stick it together in a cross pattern. Lastly, I extract the pomelo syrup with dissolved sugar again and store it in a spray bottle.
